Looking for a Healthy Snack? London Doctor Shares No-Bake Pistachio and Cacao Energy Balls Recipe

Dr Rupy Aujla’s easy snack recipe is rich in protein and fibre and requires just six ingredients

Eating healthy can often be challenging, especially when it comes to snacking. While snacks help bridge the gap between meals, they can also add unnecessary empty calories to one’s diet. Offering a simple and nutritious alternative, London-based doctor Dr Rupy Aujla, who specialises in General Practice and Emergency Medicine, recently shared a recipe for no-bake pistachio and cacao energy balls on Instagram.

The recipe is easy to prepare and requires only six ingredients. According to Dr Aujla, these energy balls are ideal for a quick afternoon pick-me-up, a post-workout snack, or a convenient on-the-go option.

Highlighting the benefits, he noted that each energy ball provides approximately 5 grams of protein and 3 grams of fibre, thanks to ingredients like pistachios, hemp seeds, and tahini. They are naturally sweetened with Medjool dates and contain no added sugar. He also added that the recipe is suitable for batch preparation and can be stored in the refrigerator or freezer for later use.

The ingredients listed below are sufficient to prepare approximately 12 servings.

Ingredients for Pistachio and Cacao Energy Balls:

  • 150g pistachios, shelled
  • 150g Medjool dates, roughly chopped
  • 2 tbsp cacao powder (raw)
  • 2 tbsp shelled hemp seeds
  • 1 tbsp coconut oil, melted
  • 3 tbsp tahini

For rolling (optional):

  • 4 tbsp pistachios, ground (shelled)

Method of Preparation:

  • Gather and prepare all ingredients. Soak the chopped dates in boiling water for 10 minutes, then drain.
  • Add all ingredients to a food processor and blend until the mixture forms a dough-like consistency.
  • Spread the ground pistachios on a plate. Take small portions of the mixture and roll them into about 12 balls. Coat each ball with the ground pistachios if desired.
  • Place the balls in an airtight container and refrigerate for at least one hour before serving.

These energy balls can be stored in the refrigerator for up to five days or in the freezer for up to three months.
