Wheat Flour Jaggery Jalebi Recipe: Make Crispy Halwai-Style Jalebi at Home
If you love hot, crispy jalebi but want to try something different from the usual maida-and-sugar version, this wheat flour jaggery jalebi recipe is a simple homemade option worth trying.
Prepared with whole wheat flour, jaggery, ghee and cardamom, these jalebis offer a rich desi flavour with the familiar crisp exterior and syrupy sweetness that makes the traditional Indian dessert so irresistible. The recipe is also relatively easy and does not require a long fermentation process.
Ingredients for Wheat Flour Jaggery Jalebi
For the jalebi batter, you will need:
- 1 bowl whole wheat flour
- 1 packet Eno
- 2–3 tablespoons desi ghee
- Water as required
- Refined oil or desi ghee for frying
- Finely chopped cashews, almonds and pistachios for garnish
For the jaggery syrup:
Step 1: Prepare the Jaggery Syrup
Begin by breaking the jaggery into smaller pieces.
Add the jaggery and one bowl of water to a pan and heat until the mixture begins to boil.
Once it reaches a boil, reduce the flame and allow it to cook for around 15 minutes. Add cardamom powder and switch off the heat.
Let the syrup cool slightly before straining it to remove any impurities.
Step 2: Make the Jalebi Batter
Take whole wheat flour in a large mixing bowl and add Eno and desi ghee.
Mix everything well before gradually adding water.
Prepare a smooth, flowing batter and whisk it continuously for around 6–7 minutes. This helps remove lumps and gives the batter a more even consistency.
The batter should be fluid enough to pipe easily but not so thin that the jalebi loses its shape while frying.
Step 3: Fill the Batter Into a Piping Bag
Transfer the batter into a jalebi bottle, piping bag or another clean piping container with a small opening.
This will help you create the traditional spiral jalebi shape directly in the hot oil or ghee.
Step 4: Fry Until Golden and Crisp
Heat refined oil or desi ghee in a kadai over medium heat.
Pipe the batter into the hot fat in circular movements to form jalebis.
Fry them on both sides until they become golden, crisp and evenly cooked.
Maintaining medium heat is important, as very high heat can brown the outside before the centre cooks properly.
Step 5: Dip Jalebis in Jaggery Syrup
Once fried, remove the jalebis and place them in the prepared jaggery syrup.
Allow them to soak briefly so they absorb the syrup while still retaining their crisp texture.
Remove them from the syrup and garnish with finely chopped cashews, almonds and pistachios.
Serve Warm for the Best Taste
The finished wheat flour jaggery jalebi recipe delivers a slightly deeper, more caramel-like sweetness than conventional sugar-syrup jalebi because of the jaggery.
Serve the jalebis warm on their own or pair them with curd for a classic sweet-and-tangy combination. They can work equally well as a festive dessert, a weekend treat or whenever you are craving something warm and sweet.
Tips for Crisp Jalebi
Keep the batter smooth and free from lumps, maintain medium heat while frying, and avoid soaking the jalebis in the syrup for too long if you want to preserve their crunch.
Using desi ghee for frying can give the jalebis a richer aroma and flavour, while chopped nuts add texture and a festive finish.
