You will need:
- 150g uncooked pasta

- 15ml olive oil
- 1 red onion, thinly sliced
- Β½ cucumber, chopped
- Β½ red pepper, chopped
- 300g pulled lamb shoulder, preferably pre-cooked
- 12 Kalamata olives
- 75g tzatziki
- A handful of fresh dill, chopped
- A handful of fresh mint, chopped
- 75g feta, crumbled
How to Make Pulled Lamb Pasta Salad
Step 1: Cook the Pasta
Bring a saucepan of salted water to a boil.
Add the pasta and cook for six to eight minutes, or according to the packet instructions, until tender but still slightly firm.
Drain the pasta and rinse it under cold water to cool it quickly, then set it aside.
Step 2: Season the Pasta
Transfer the cooled pasta to a large mixing bowl.
Add dried oregano, a pinch of salt, freshly ground black pepper and olive oil.
Toss everything together until the pasta is evenly coated.
Step 3: Add Vegetables and Lamb
Add the sliced red onion, chopped cucumber and red pepper to the pasta.
Then add the pulled lamb and Kalamata olives.
Spoon in the tzatziki and gently mix until all the ingredients are well combined.
Fresh Herbs Add Extra Flavour
Stir through the chopped dill and mint, reserving a small amount for garnish if desired.

Step 4: Finish With Feta
Crumble the feta over the salad and gently toss again.
