Makki Di Roti Recipe | Classic Punjabi Flatbread for Baisakhi Meals

By Editorial Team
Makki di roti is a traditional gluten-free Punjabi flatbread made with maize flour, popularly served during Baisakhi with sarson da saag.

Golden, soft, and slightly crisp at the edges, makki di roti is one of the most loved dishes during Baisakhi in Punjab. Made from makki ka atta (maize flour), this traditional flatbread has a mild earthy flavour that pairs perfectly with sarson da saag. It is usually cooked on a hot tawa or in a traditional tandoor, giving it a rustic taste and texture.

Makki di roti is prepared using simple ingredients like maize flour, water, salt, and a touch of ghee or oil. Many households enhance its flavour by adding ajwain, fresh methi leaves, or grated radish. Yellow maize flour is most commonly used, as it gives the roti its signature colour and soft texture.

Baisakhi, which marks the harvest season in Punjab, is celebrated with music, dance, and festive meals made from fresh produce. Makki di roti and sarson da saag are an iconic combination during this time, often served hot with white butter, jaggery, or green chillies on the side.

Maize flour is naturally gluten-free and contains fibre, iron, and small amounts of protein, making it a nutritious option. It may help support digestion and is suitable for those avoiding wheat. For a softer texture, some people mix a small portion of whole wheat flour into the dough and use less ghee for a lighter version.

Simple Recipe to Make Makki Di Roti

Ingredients:

  • 2 cups maize flour (makki ka atta)
  • Warm water (as needed)
  • ½ tsp salt
  • ½ tsp ajwain (optional)
  • 2 tbsp fresh methi leaves (optional)
  • Ghee or oil for cooking

Instructions:

  1. In a bowl, mix maize flour, salt, ajwain, and methi leaves.
  2. Gradually add warm water and knead into a soft dough.
  3. Take a small portion and gently pat it into a flat roti using your hands or between plastic sheets.
  4. Heat a tawa and carefully place the roti on it.
  5. Cook on medium heat, applying ghee or oil, until both sides turn golden and slightly crisp.
  6. Serve hot with sarson da saag, butter, jaggery, or curd.

Why Makki Di Roti is Nutritious

  • Rich in fibre: May help support digestion and gut health
  • Gluten-free: Suitable for those avoiding wheat
  • Good source of iron: Helps support overall health
  • Added nutrition: Methi leaves provide vitamin A and iron
  • Digestive support: Ajwain may help reduce heaviness

Makki di roti reflects the essence of Punjabi cuisine — simple, wholesome, and deeply connected to seasonal traditions — making it a perfect addition to festive meals like Baisakhi.
